Our croque madame is a gratinated ham-and-cheese toastie topped with a fried egg. That egg is exactly what sets it apart from the croque monsieur, and it’s the reason our croque madame in Amsterdam is hard to walk past. We layer airy sourdough bread with Dutch cheese and ham, add a touch of mustard and let the cheese gratinate to golden brown. On top, a fried egg with a soft, runny yolk.
